Summer salads for the win!

If you read yesterday’s post about protein and thought: “self- I think I’m going to add more protein to my diet.” then you are going to love this simple summer salad.

The best part is that you don’t have to measure- I mean, I don’t!

This is a great summer meal prep idea with a respectable 5g of plant proteins and 10g of fiber! If you want to pump up the protein add avocado, chicken, tofu, some seeds, or (my favorite) some feta cheese.
