Greek Style Chopped Salad Recipe

Spring meal planning means the return of salads

A true follower of the seasons might be getting excited about salads again! It’s ok if you took the last 6 months off the leafy greens, raw veggies, and vinegary dressings- but it’s time to make use of that rising heat!

Raw veggies are a great way to support gut health, help with shedding a few pounds, and nourish a potentially winter-depleted body. Plus BONUS- salads are kapha pacifying, meaning that they help to lift some of the heaviness from a long, dark, cold winter.

Not everyone should indulge in the lunch-prep-standard green salad though as recipes like this one tend to be aggrivating for vata types and might increase gas and bloating if you suffer from some GI issues or PCOS.

If you notice that salads don’t seem to agree with you here are a few suggestions to try:

  • Eat mindfully- turn off screens, single-task your meal, and notice when you feel full

  • Add a grounding grain, roasted sweet potato, or warm up your dressing to drizzle over the top

  • Meal times matter. Aim to eat your salad when agni (digestion) is the highest- between 10am and 2pm, or the pitta hours.

  • Make the raw portion smaller and center your meal around grilled chicken or fish

  • Note that beans can be aggravating for a vata imbalance, so including beans on a salad might not be your ideal combo.

As you celebrate the return of garden veggies I encourage you to be curious with your veggies. Keep a journal of your meals and any symptoms that you may have and notice if there is a pattern.
